3. Make a dozen cute tags to dress up an ordinary ziplock bag in between getting up and transferring around cookies from the oven to the cooling racks.
As you can see I had a busy Friday night. When my mom called me last Tuesday and asked if I would be in the annual cookie exchange that Saturday, I had a moment of crazy and said, "okay, sounds like fun. I'll do it." Oh, but wait. I had another dose of crazy when I thought to myself, I will make those wonderful homemade oreos. Everyone loves those and I will have the best cookies of all to share. Doesn't sound too crazy right? Wrong, homemade oreos are sandwich cookies... that means in order to have a dozen you have to make two dozen cookies. Since I was informed I needed to make 12 dozen cookies, I ended up making 24 dozen cookies! Exhausting as that was I do love the smell of fresh baked cookies, although I am convinced that simply smelling them added a few inches to my mid-section (oh wait, that was the sampling of all the cookies in the end...) Wasn't I surprised to learn come Saturday afternoon, that really I only should have made 9 dozen cookies! Well, I know Andrew said he didn't really want me to send him sweets, but honey here they come! Needless to say my kitchen is over-run by cookies, sadly though, come next week who knows how many the cookie monster will have left untouched...
If you would like to participate in the crazy, okay you don't have to make 288 cookies, how about less than that? You really have to try this recipe. They are the best cookies in the whole world, I think better than real oreos and they are so easy to make.
Homemade Oreos (aka Cabin cookies)
courtesy of my friend Lindsey from Utah by way of Portland
Ingredients: 2 devils food cake mixes, 2/3 cup vegetable oil, 4 eggs, and cream cheese frosting.
Mix the cake mixes, oil, and eggs to make the cookie dough (don't add the stuff to make the cake though! Just the dry mix). Roll into balls and bake at 350 for 8-10 minutes. remove from the oven and let cool. Once cool plop a good helping of frosting between 2 cookies and make yourself a delicious sandwich cookie.
This will make about 71 cookies if you make the balls 1 tbsp. size (I should know, I made enough of them!) Feel free to cut the recipe in half to make less! Enjoy!
